The role:
The Junior Development Chef is responsible for supporting the Food Operations Manager and Development Chef with designing and developing new dishes and menus for the Joseph Holt estate of food pubs.
Key Responsibilities:
· Work with the Development Chef and the Food Operations Manager to create new and innovative dishes across our four varied menu concepts which keep Joseph Holt ahead of the competition.
· Work independently to develop sound recipes/dishes with accuracy for different menus, bringing new products and ideas to the team.
· Support the Development Team to meet and exceed customer expectations.
· Provide training and support to kitchens across the company, when required.
· Participate in brainstorming sessions to build a strong bank of ideas around menu and dish development.
· Cook and present dishes clearly, accurately and persuasively where required.
· Support the Development team with repeat sampling, when required.
· To share efficacious best practice in our pubs and kitchens.
· Understand operational capabilities.
· Support on training within our kitchens across the North West, developing and delivering workshops.
· Maintain and stock the development kitchen and associated stores.
The successful candidate:
· Fully qualified chef with previous experience in a highly skilled culinary role, ideally working with multiple teams across multiple locations.
· Industry acumen and knowledge of external catering developments and food innovations.
· Full driving licence and access to a vehicle for business purposes.
· Well organised.
· Creative and able to think outside of the box.
· Enthusiastic and positive.
· Proven ability communicating with all levels of the business.
· Willingness to visit and work from different sites and suppliers, where required.
· Adhere to all company policies and procedures.
· Professional manner.
· Ensure high quality and hygiene standards are maintained.
· Experienced in training and mentoring kitchen teams.
· Ability to work collaboratively as a team.

]]>The Development Chef is responsible for designing and developing new dishes and menus for the Joseph Holt estate of food pubs. You will oversee the consistency and delivery of the food menus offering for the food pubs across the North West, which drive growth and keep our menus commercially viable.
The varied lists of duties and tasks includes but are not limited to:
· Work with other Chefs and the Food Operations Manager to create new and innovative dishes across our four varied menu concepts which keep Joseph Holt ahead of the competition.
· Attend supplier food shows.
· Support the Development Team to meet and exceed customer expectations.
· Provide support to kitchens across the company, when required.
· Participate in brainstorm sessions to build a strong bank of ideas around menu and dish development.
· Completion of accurate dish costings, recipes and calorific values.
· Cook and present dishes clearly, accurately and persuasively where required.
· Support the Development team with repeat sampling, when required.
· Understand operational capabilities.
· Provide accurate allergen information to support the creation of new dishes and menus.
· Lead on training within our kitchens cross the North West, developing and delivering workshops.
· Supporting the business to reduce waste and improve profitability at all levels.
· Liaising with suppliers to ensure that Joseph Holt is aware of new products coming to the market.
· Continuously researching the market and staying ahead of consumer trends.
· Cover for the Food Operations Manager in their absence, where required.
Key Capabilities and Experience
· Fully qualified chef with previous experience in a highly skilled culinary role, ideally working with multiple teams across multiple locations.
· Experienced in developing appropriate dishes for different styles of menu from simple low cost, low skill, to high volume and aspirational fresh food.
· Experience of costing recipes and demonstrable in understanding budgets.
· Working knowledge of Microsoft Excel and comfortable with using computer software to interrogate sales data and stock issues.
· Industry acumen and knowledge of external catering developments and food innovations.
· Full driving licence and access to a vehicle for business purposes.
· Well organised.
· Creative and able to think outside of the box.
· Enthusiastic and positive.
· Proven ability communicating with all levels of the business.
· Willingness to visit and work from different sites and suppliers, where required.
· Adhere to all company policies and procedures.

Trading at £30k-£40k per week, with even higher seasonal peaks, The Roebuck operates on a 65/35 wet-to-food split and features a fantastic Evolution menu set to undergo further enhancements in the coming months.
This is a premium, high-volume site within the Joseph Holt estate, and we’re seeking an operator with proven experience managing a successful wet/food venue to continue driving its growth and success. The On trade is one of the most vibrant and energetic industries in the UK, made up of pubs bars restaurants and night clubs and this role provides a great career to those individuals that love hospitality and meeting their customers.
You will join our successful Free Trade sales team operating in one of our key regions working with National Brands such as Birra Moretti, Cruz Campo, Beavertown Neck Oil, Madri, Guinness and San Miguel to name but a few. The role is customer facing and field based so you will spend your time visiting customers in all kinds of On trade outlets, helping to grow the distribution of Joseph Holt brands and a full range of our key national partner brands. Essentially you will be tasked to develop your own area while managing your own diary.
Key Responsibilities:
· Gross Margin & Volume Growth – To develop Joseph Holt’s share of both margin & volume identifying own brand opportunities.
· Account Base Management – understand and manage your existing account base through regular customer reviews building excellent working relationships.
· New business – to develop a prospect pipeline and a clear plan of how to win new business to ensure you maintain a positive net account base.
· Cross Functional Working – build effective internal relationships and an understanding of the business to use the support functions available to maximise opportunities.
· To work closely with the Customer Services and Credit Control teams to offer help and support where needed.
· To build great working relationships with our suppliers to maximise all joint venture opportunities.
The successful candidate:
· Ideally having experience within the Independent Free Trade.
· Excellent sales and business development skills, with the ability to self-source and develop new business opportunities.
· Excellent presentation and interpersonal skills and ability to influence buying decisions
· Well presented, organised, confident and personable
· Able to work independently and as part of a team
· Flexible and highly motivated
· Good spoken and written English Language skills
· A full clean driving licence
