Development Chef
Where: Preston Road, Charnock Richard, Chorley, PR7 5LA
An exciting opportunity has arisen for an experienced development chef to join our team at The Bowling Green.
The Development Chef is responsible for designing and developing new dishes and menus for the Joseph Holt estate of food pubs. You will oversee the consistency and delivery of the food menus offering for the food pubs across the North West, which drive growth and keep our menus commercially viable.
The varied lists of duties and tasks includes but are not limited to:
· Work with other Chefs and the Food Operations Manager to create new and innovative dishes across our four varied menu concepts which keep Joseph Holt ahead of the competition.
· Attend supplier food shows.
· Support the Development Team to meet and exceed customer expectations.
· Provide support to kitchens across the company, when required.
· Participate in brainstorm sessions to build a strong bank of ideas around menu and dish development.
· Completion of accurate dish costings, recipes and calorific values.
· Cook and present dishes clearly, accurately and persuasively where required.
· Support the Development team with repeat sampling, when required.
· Understand operational capabilities.
· Provide accurate allergen information to support the creation of new dishes and menus.
· Lead on training within our kitchens cross the North West, developing and delivering workshops.
· Supporting the business to reduce waste and improve profitability at all levels.
· Liaising with suppliers to ensure that Joseph Holt is aware of new products coming to the market.
· Continuously researching the market and staying ahead of consumer trends.
· Cover for the Food Operations Manager in their absence, where required.
Key Capabilities and Experience
· Fully qualified chef with previous experience in a highly skilled culinary role, ideally working with multiple teams across multiple locations.
· Experienced in developing appropriate dishes for different styles of menu from simple low cost, low skill, to high volume and aspirational fresh food.
· Experience of costing recipes and demonstrable in understanding budgets.
· Working knowledge of Microsoft Excel and comfortable with using computer software to interrogate sales data and stock issues.
· Industry acumen and knowledge of external catering developments and food innovations.
· Full driving licence and access to a vehicle for business purposes.
· Well organised.
· Creative and able to think outside of the box.
· Enthusiastic and positive.
· Proven ability communicating with all levels of the business.
· Willingness to visit and work from different sites and suppliers, where required.
· Adhere to all company policies and procedures.
· Professional manner.
· Ensure high quality and hygiene standards are maintained.
· In many instances you’ll be expected to meet tight deadlines, so you’ll be comfortable in high pressure situations and able to work effectively.
· Ability to work collaboratively as a team.
· Strong attention to detail.
· Experienced in training and mentoring kitchen teams.
· Ability to create detailed recipe documentation.
